Dump cooked vegetables into a large bowl, add 3 tablespoons ketchup and 1 tablespoon of Worcestershire sauce. Cool for a few minutes.
While those are cooling, stir the breadcrumbs and milk together and let stand for a few minutes.
Add breadcrumbs and beaten eggs to onions and mushrooms, then mix well. Next, add turkey along with remaining 1/2 teaspoon of salt and 1/4 teaspoon of pepper. Mix well with clean hands. (It will be wet!).
Shape mixture into a loaf in the middle of prepared baking sheet.
Then combine remaining ketchup with brown sugar and apple cider vinegar. With the back of a spoon or a spatula, spread on top of meat loaf. Bake for 50 minutes or until an instant read thermometer reads 170? when inserted into the thickest part of the loaf.
Serves 4-6.
