Chapter 58: Tiramisu dessert:

Luckily, I've all the ingredients to make this dish because a week before I wanted to make it but I was too caught up in my finals for music as I was graduating music this year. I only wanted to get a bachelor's degree in music and a master in fashion and design.

I washed all the equipment and brought out new ones so that there would be no cross contamination.

1) Put the double cream, mascarpone, marsala and golden caster sugar in a large bowl.

I placed all the correct measurements into the large bowl according to the instructions. This was the second time I had done this so most of the steps were quite familiar.

2)Whisk until the cream and mascarpone have completely combined and have the consistency of thickly whipped cream.

I whisk until my arm hurt yet it still wasn't thick enough so I had Wei Wei do it.

3) Pour the coffee into a shallow dish. Dip in a few of the sponge fingers at a time, turning for a few seconds until they are nicely soaked, but not soggy. Layer these in a dish until you've used half the sponge fingers, then spread over half of the creamy mixture.

I followed the instructions however at that moment I received a message that my delivery is outside waiting for me. I asked Wei Wei to go with Cheng Li and get it for me as I was busy and I couldn't allow Wei Wei to go out in the night alone. It's not to safe these days.

4)Using the coarse side of the grater, grate over most of the dark chocolate. Then repeat the layers (you should use up all the coffee), finishing with the creamy layer.

As I finished this step Wei Wei and Cheng Li had come back safely, each holding two bags themselves. "Damn that's a lot of food," announced Fang Feng as she went to help them.

5)Cover and chill for a few hours or overnight.

As I read these instructions, I came to a problem. I couldn't keep it overnight so I put it into the freezer for half an hour in the hope that it would be the same.

30 minutes later, I pulled the dessert out of the freezer and I noticed it had frozen quite well. Hence I followed the next step.

6)To serve, dust with the cocoa powder and grate over the remainder of the chocolate.

I had made two portions so I placed one in front of the other to try and package the other. "How does it taste?" I asked as they all gave a big thumbs up. I signed in relief because even the picky Wei Wei agreed it tasted nice. I placed some in my mouth and immediately I could taste the coffee cover with some sweetness. It was an amazing taste. It was better than I did it last time.

I got my stuff ready and I knew with all these bags that I couldn't possibly take the bus. So, I asked to drive Wei Wei's car out however, she wasn't very sure that'd be safe as I was still sick. She even made me drown in some ginger water that Cheng Li had made before we left.

They all helped me carry the bags into Wei Wei's car in the back of the school. The other waved goodbye and headed to the dorm. But Wei Wei ecided to stay back to say something to me.

"Hui Qing, you know you're not meant to drive," she muttered as I denied it. "If you don't tell anyone how would my parents know? Relax I will drive safely," I announce. "If you say so, drive slowly and carefully," she ordered as I nodded. She didn't look reassured at all hence she decided to join me in the car. She wouldn't let me drive so I could only sit in the passenger seat. She seriously worries far too much.
