Most slimes lack a "soul," which means they miss two of the three elements—body, mind, and spirit—and only possess the element of "body." As for those slimes that do have souls, apart from Ybur, this anomaly, they usually belong to types such as Elemental Monsters and Desolation Plague Monsters, which are too powerful and have a complete sense of self, making it impossible for the weak spirits of familiars to assimilate them.
