Once his identity as a Chaos Devourer is leaked, then he would no doubt be screwed, and the entire Upper Realm will instantly order for his death.

That said, not using his Chaos Devourer form would really limit his strength a lot. Sure, he could fight in any state, but to Zeras, the Chaos devourer form was the most natural to him.
