This seemed like quack science to me since humans and animals were completely different, that was the reason why humans couldn't produce offspring with animals in the first place.

If one could gain new abilities just by transplanting animal parts into their bodies, wouldn't everyone do that?

They didn't do that because there were many factors that had to be considered in this matter.

First and foremost was rejection of these parts.

There were differences in different creatures that would cause rejection of new parts from them. It would lead to the immune system of humans attacking these parts because they don't recognize certain things about these new parts.
